Roasted Veggies with Grapes

  1. Preheat oven to 400°F.
  2. Prepare a baking sheet with parchment paper
  3. In a bowl, toss about
  • 10 cups of your favorite vegetables cut/ sliced into bitesize pieces, like rainbow carrots, Brussel sprouts, red onion, squash of choice, red/green/yellow peppers, zucchini, cauliflower, broccoli, asparagus, beets (pre-cooked)
  • 2 cups purple/red or green seedless grapes
  • 1/4 cup avocado or coconut oil
  • 6 garlic cloves, crushed
  • 1-2 tsp fine pink sea salt
  • 1/2 tsp pepper
  1. Line a baking sheet with parchment paper for easy cleanup and spread out veggies across it
  2. Sprinkle with thyme and sage
  3. Roast for 45-50 minutes, tossing halfway through
  4. Once soft and tender, remove from the oven
  5. If adding honey, add while veggies are warm and toss
  6. Add additional salt and pepper as desired and serve hot
