Roasted Veggies with Grapes
- Preheat oven to 400°F.
- Prepare a baking sheet with parchment paper
- In a bowl, toss about
- 10 cups of your favorite vegetables cut/ sliced into bitesize pieces, like rainbow carrots, Brussel sprouts, red onion, squash of choice, red/green/yellow peppers, zucchini, cauliflower, broccoli, asparagus, beets (pre-cooked)
- 2 cups purple/red or green seedless grapes
- 1/4 cup avocado or coconut oil
- 6 garlic cloves, crushed
- 1-2 tsp fine pink sea salt
- 1/2 tsp pepper
- Line a baking sheet with parchment paper for easy cleanup and spread out veggies across it
- Sprinkle with thyme and sage
- Roast for 45-50 minutes, tossing halfway through
- Once soft and tender, remove from the oven
- If adding honey, add while veggies are warm and toss
- Add additional salt and pepper as desired and serve hot
