Grain Free Rolls

  • 1 cup tapioca or arrowroot flour
  • 1/4 - 1/3 cup coconut flour
  • 1 tsp sea salt
  • 1/2 cup warm water
  • 1/2 cup olive or avocado Oil
  • 1 Large egg whisked
  • 2 tsp Italian seasoning (optional)
  • 1 Tbsp minced garlic (optional)
  • 1 large egg, beaten to blend with 1 Tbspwater (for optional glaze)
  • 1/2 teaspoon seeds, ie., sesame, poppy, flax (optional)


  1. Preheat oven to 350°F. Prepare baking sheet with parchment paper.
  2. In a large bowl, combine flours and salt. Slowly pour in water and oil, mixing until blended.
  3. Add one egg and stir until combined. If the mixture is too wet, add more coconut flour as needed, 1 Tbsp at a time, waiting slightly between additions (this will give the coconut flour time to absorb the liquid and you can have a better gauge whether more is needed or not).
  4. Using a small cookie scoop, place balls of dough on the baking sheet an inch or so apart (these rolls do not spread).
  5. Gently brush top of buns with egg glaze. Sprinkle each with 1/2 teaspoon seeds.
  6. Bake for 30-35 minutes, or until slightly browned on the bottom. Remove from baking sheet and serve warm.
  7. Best eaten the same day.
