LifeHouse Chiropractic in London, ON is serving up this Chia Seed Pudding in our office this week as an Easter treat! It’s gluten free, dairy free, and is slightly sweetened with natural maple syrup.  There are lots of variations online for chia seed pudding, but this is our own recipe designed for good taste and ease of preparation.

INGREDIENTS:

  • 1 can (398ml) coconut milk, organic, full fat
  • ½ cup almond milk, organic, unsweetened
  • ½ cup cocoa powder, organic
  • 1/3 cup maple syrup
  • ½ cup chia seeds
  • 1 tsp pure vanilla extract, sugar-free
  • Pinch of salt
  • Optional toppings: coconut, nuts, seeds, dried fruit

DIRECTIONS:

  • Mix well in a large bowl. Pour into individual little bowls. Sprinkle with coconut, nuts, seeds, or dried fruit.
  • Refrigerate for at least 1 hour.
  • Store in the refrigerator.
  • Indulge!
