Balsamic Watermelon Salad

Ingredients
- 1 medium watermelon
- 1/2 cup goat cheese, crumbled, optional
- 10-15 basil leaves, cut in ribbons
- Optional add-ins - green or red onion, chopped tomatoes, nuts, arugula
- Balsamic vinegar or dressing (Make sure it doesn’t have sugar, Farm Boy bottles a good balsamic vinaigrette.)
Instructions
Remove rind from the watermelon and cut into 1” pieces and place in a bowl. Add goat cheese and basil. Gently stir to combine. Drizzle with balsamic vinegar or dressing. Chill for 10 minutes and serve.
