Grain Free Rolls
INGREDIENTS
- 1 cup tapioca or arrowroot flour
- 1/4 - 1/3 cup coconut flour
- 1 tsp sea salt
- 1/2 cup warm water
- 1/2 cup olive or avocado Oil
- 1 Large egg whisked
- 2 tsp Italian seasoning (optional)
- 1 Tbsp minced garlic (optional)
- 1 large egg, beaten to blend with 1 Tbspwater (for optional glaze)
- 1/2 teaspoon seeds, ie., sesame, poppy, flax (optional)
INSTRUCTIONS
- Preheat oven to 350°F. Prepare baking sheet with parchment paper.
- In a large bowl, combine flours and salt. Slowly pour in water and oil, mixing until blended.
- Add one egg and stir until combined. If the mixture is too wet, add more coconut flour as needed, 1 Tbsp at a time, waiting slightly between additions (this will give the coconut flour time to absorb the liquid and you can have a better gauge whether more is needed or not).
- Using a small cookie scoop, place balls of dough on the baking sheet an inch or so apart (these rolls do not spread).
- Gently brush top of buns with egg glaze. Sprinkle each with 1/2 teaspoon seeds.
- Bake for 30-35 minutes, or until slightly browned on the bottom. Remove from baking sheet and serve warm.
- Best eaten the same day.
